Up in Baltimore County, Gunpowder Bison & Trading Co. has been having a 4-part event series that’s a cookout party in itself. Due to a hectic travel schedule this year, I just was able to fit this week’s event in, but I highly encourage you to make this Thursday’s — the last of the year — event. The food is presided over by Top Chef contestant Jesse Sandlin.
This week’s event was called “Slow and Low,” which is kinda erotic, if you ask me. It featured slowly braised meats and veggies of all kinds. I was a little surprised that there were no desserts. As for the meal, you just pay for the courses you want, ranging from a few dollars to around $10. They also make homemade cocktails and this past week was with Bison Grass vodka (of course!) and apple juice, very seasonal. The ambiance is a wonderful farmhouse with extensive property, complete with bison grazing down the road. There are a few picnic tables and a live band.
Here was this week’s menu: A celebration of some of our favorite cooking methods, braising, simmering, confit, all the low temp., long time cooking that develops deep flavors. Great for this awesome fall weather we’re having!!
*Braised Bison Short Ribs-red wine, mirepoix
*Pork Carnitas Tacos-slow roasted shoulder, cooked in it’s own fat, with cabbage and radish slaw, and lime-cumin sour cream
*Chicken Cacciatore- GrandView Farms Chicken Legs w/tomato, onion, capers and basil (I highly recommend this tender and quite flavorful dish!)
*Beef Stew- with potatoes, and Evolution Craft Brewing’s Lucky 7 Porter
*Potatoes Au Gratin w/bacon (I got and ate two portions. ‘Nuff said.)
*Braised Greens w/ smoked ham hocks
*Sauerkraut w/ braised pork belly
*Spinach Salad w/ candied pecans and dark chocolate pomegranate seeds (This was quite an inventive salad. I never had chocolate in a salad before and it works! Think of all the anti-oxidants . . . )

*Bison Delmonico (I just bought and cooked one. It’s so tender and luscious, it’ll change your mind about bison! Cook it rare like I did.)

*Fried Tanner’s Pickles
